Ingredients:
- 1.5 pounds pork ribs, cut into individual ribs
- 4 cloves garlic, minced
- 1 large onion, thinly sliced
- 2 large potatoes, peeled and cut into chunks
- 1 tablespoon fresh ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons brown sugar (optional, for a hint of sweetness)
- 1 cup water or chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Chopped green onions or cilantro (for garnish)
Instructions:
Prepare the Pork Ribs:
- Season the pork ribs with salt and pepper.
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add the pork ribs and brown them on all sides, working in batches if necessary. This should take about 5-7 minutes. Remove the ribs and set aside.
Sauté Aromatics:
- In the same pot, add the sliced onions and sauté until they begin to soften, about 3-4 minutes.
- Add the minced garlic and ginger, and cook for another minute until fragrant.
Combine and Braise:
- Return the browned pork ribs to the pot.
- Add the soy sauce, brown sugar (if using), and water or chicken broth.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes.
Add Potatoes:
- After 30 minutes, add the potato chunks to the pot.
- Stir to combine, making sure the potatoes are submerged in the liquid.
- Continue to simmer, covered, for another 30-40 minutes, or until the ribs are tender and the potatoes are cooked through.
Adjust Seasoning:
- Taste the sauce and adjust the seasoning with salt and pepper if needed.
- If the sauce is too thick, you can add a bit more water or broth. If it's too thin, let it simmer uncovered for a few more minutes to reduce.
Serve:
- Serve the braised pork ribs and potatoes hot, garnished with chopped green onions or cilantro.
