Braised Pork Ribs with Potatoes

 



Ingredients:

  • 1.5 pounds pork ribs, cut into individual ribs
  • 4 cloves garlic, minced
  • 1 large onion, thinly sliced
  • 2 large potatoes, peeled and cut into chunks
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar (optional, for a hint of sweetness)
  • 1 cup water or chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Chopped green onions or cilantro (for garnish)

Instructions:

  1. Prepare the Pork Ribs:

    • Season the pork ribs with salt and pepper.
    • Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
    • Add the pork ribs and brown them on all sides, working in batches if necessary. This should take about 5-7 minutes. Remove the ribs and set aside.
  2. Sauté Aromatics:

    • In the same pot, add the sliced onions and sauté until they begin to soften, about 3-4 minutes.
    • Add the minced garlic and ginger, and cook for another minute until fragrant.
  3. Combine and Braise:

    • Return the browned pork ribs to the pot.
    • Add the soy sauce, brown sugar (if using), and water or chicken broth.
    • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes.
  4. Add Potatoes:

    • After 30 minutes, add the potato chunks to the pot.
    • Stir to combine, making sure the potatoes are submerged in the liquid.
    • Continue to simmer, covered, for another 30-40 minutes, or until the ribs are tender and the potatoes are cooked through.
  5. Adjust Seasoning:

    • Taste the sauce and adjust the seasoning with salt and pepper if needed.
    • If the sauce is too thick, you can add a bit more water or broth. If it's too thin, let it simmer uncovered for a few more minutes to reduce.
  6. Serve:

    • Serve the braised pork ribs and potatoes hot, garnished with chopped green onions or cilantro.
