Chicken and Tofu Stir-Fry

Ingredients:

  • 2 chicken breasts, cut into bite-sized pieces
  • 1 block of firm tofu, drained and cubed
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 bell pepper, thinly sliced (any color)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Cooked rice or noodles (for serving)
  • Chopped green onions or cilantro (for garnish)

Instructions:

  1. Prepare the Tofu:

    • Drain the tofu and pat it dry with paper towels. Cut into bite-sized cubes.
    • Heat a non-stick skillet over medium-high heat and add a tablespoon of vegetable oil.
    • Once the oil is hot, add the tofu cubes and cook until they are golden brown on all sides. This should take about 5-7 minutes. Remove the tofu from the skillet and set aside.
  2. Cook the Chicken:

    • In the same skillet, add the chicken pieces. Cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  3. Stir-Fry the Vegetables:

    • Add a little more oil to the skillet if needed. Add the sliced onion and bell pepper. Stir-fry for about 3-4 minutes until they start to soften.
    • Add the minced garlic and cook for another minute, stirring constantly to prevent the garlic from burning.
  4. Combine Everything:

    • Return the cooked chicken and tofu to the skillet with the vegetables.
    • Add the soy sauce and oyster sauce (if using). Stir everything together and cook for another 2-3 minutes until everything is well combined and heated through.
    • Season with salt and pepper to taste.
  5. Serve:

    • Serve the chicken and tofu stir-fry over cooked rice or noodles.
    • Garnish with chopped green onions or cilantro if desired.

Enjoy your homemade Chicken and Tofu Stir-Fry!
