Ingredients:
- 2 chicken breasts, cut into bite-sized pieces
- 1 block of firm tofu, drained and cubed
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 bell pepper, thinly sliced (any color)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Cooked rice or noodles (for serving)
- Chopped green onions or cilantro (for garnish)
Instructions:
Prepare the Tofu:
- Drain the tofu and pat it dry with paper towels. Cut into bite-sized cubes.
- Heat a non-stick skillet over medium-high heat and add a tablespoon of vegetable oil.
- Once the oil is hot, add the tofu cubes and cook until they are golden brown on all sides. This should take about 5-7 minutes. Remove the tofu from the skillet and set aside.
Cook the Chicken:
- In the same skillet, add the chicken pieces. Cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
Stir-Fry the Vegetables:
- Add a little more oil to the skillet if needed. Add the sliced onion and bell pepper. Stir-fry for about 3-4 minutes until they start to soften.
- Add the minced garlic and cook for another minute, stirring constantly to prevent the garlic from burning.
Combine Everything:
- Return the cooked chicken and tofu to the skillet with the vegetables.
- Add the soy sauce and oyster sauce (if using). Stir everything together and cook for another 2-3 minutes until everything is well combined and heated through.
- Season with salt and pepper to taste.
Serve:
- Serve the chicken and tofu stir-fry over cooked rice or noodles.
- Garnish with chopped green onions or cilantro if desired.
